Scrambled Eggs with Smoked Oysters, Chives and Seaweed

A fusion of flavours make this dish perfect for a leisurely brunch.

Ingredients:

6 A-sized eggs100ml double cream

2 tbsp grated parmesan cheese

2 tbsp chopped chives

2 tbsp butter, room temperature

2 ciabatta bread, sliced into half and toasted106g smoked oysters, drained

Sea salt and pepper

A handful of seaweed

Spinach for garnishing

Method:

1. Combine eggs with double cream, grated parmesan cheese and chopped chives. Whisk egg mixture for half a minute.

2. Melt butter in a pan and add egg mixture. Stir continuously over high heat and when eggs start to thicken, add oysters. Briefly cook until the eggs are no longer runny. Season scrambled eggs with sea salt and pepper.

3. Spoon scrambled eggs onto toasted bread. Top it with shredded seaweed and spinach leaves, and it’s ready to be served.

 

Spiced Papaya and Banana Milkshake

Ingredients:

¼ ripe papaya1 large banana

500ml low fat milk, chilled

¼ tsp ground nutmeg4 tbsp honey

Ground cinnamon

Method:

1. Dice papaya and banana into small cubes.

2. Combine papaya, banana, and milk into a blender. Process until mixture is smooth.

3. Pour mixture into two short glasses and add honey to taste.

4. Sprinkle a pinch of ground cinnamon and nutmeg over the drinks just before serving.

 

Homemade Granola with Fruit and Yogurt

Not just for breakfast, homemade granolas are also the best thing to nibble on during the day, to stave off hunger pangs between meals.

 

Preparation time: 30 minutes

Ingredients:

360g old fashioned rolled oats140g wheat bran

40g toasted wheat germ

50g pumpkin seeds

80g whole almonds, coarsely chopped

50g hazelnuts, coarsely chopped

250ml organic apple cider vinegar

50g soft brown sugar

3 tbsp sunfl ower oil90ml maple syrup or golden syrup

1 tsp ground cinnamon

1 tsp ground nutmeg

1 tsp salt

80g dried cranberries

80g sultanas

Method:

1. Lightly grease a large baking pan and pre-heat oven to 150˚C.Combine rolled oats, wheat bran, toasted wheat germ, pumpkin seeds, chopped almonds and hazelnuts in a mixing bowl. Set aside.

2.  In a small saucepan, cook apple cider vinegar and brown sugar over medium heat until liquid has reduced by half (three to four minutes). Add the sunflower oil, maple syrup or golden syrup, cinnamon, nutmeg and salt.

3. Pour warm mixture over rolled oat combo and mix well.

4. Spread mixture onto the baking pan and bake until it turns golden brown (approximately 15 to 25 minutes), stirring it only once. Then transfer the tray onto a wire rack to cool completely.

5. Fold in cranberries, sultanas and store mixture in airtight containers. Granola mix is best served with yogurt, milk or fresh fruit of your choice.

 Ingredients:

2 cucumbers1 medium carrot

1 small beetroot

4 medium tomatoes, cut into quarters

2 stalks celery, trimmed1 green capsicum

1 red capsicum

½ lemon, cut into wedges to serve with juice

Method:

1. Peel cucumber, carrot, tomatoes and beetroot.

2. Cut celery, and deseed green and red peppers.

3. Run all ingredients through a fruit juicer. Stir to combine.

4. Just before serving, add a dash of lemon juice for a tangy flavour. Serve chilled or at room temperature.

 

Cowboy Buns

An all-in-one meal that will wake you up early in the morning with a sweet and light gravy.

 

Preparation time: 20 minutes

Serves: 6

Ingredients:

6 crusty buns3 tbsp softened butter

3 tbsp olive oil

2 tbsp onions, finely chopped

2 eggs, lightly beaten200g baked beans

4 hot dogs, sliced

Sea salt and pepper

Method:

1. Pre-heat oven to 190˚C. Cut away tops of buns and hollow out the centres. Brush the insides with butter and cover using the pieces that were cut out.

2. Place prepared buns in baking tray, covering it with foil and baking it for 10 minutes in the pre-heated oven.

3. Meanwhile, heat olive oil and sauté onions for one minute, then add the eggs and cook until they set. Add baked beans, sliced hot dogs and cook until everything has heated thoroughly. Season with some sea salt and pepper.

4. Fill buns with baked beans mixture and cover with lid. Serve it hot with garden salad on the side.
