BEETROOT & RED CABBAGE COLESLAW
PREPARATION TIME 15 MINUTES
SERVES 5-6
INGREDIENTS
1 tin (400g) pickled beetroot, drained
and shredded
3 cups finely shredded red cabbage
1 small purple onion (60g)
DRESSING
2 tbsp apple cider vinegar
4 tbsp olive oil
1 tsp wholegrain mustard
¼ tsp salt
2 tsp sugar
Large pinch of ground black pepper
TO MAKE SALAD
1. Combine dressing
ingredients in a small bowl.
2. Mix beetroot, red cabbage
and onion in a mixing bowl.
Drizzle dressing over salad.
Toss and serve immediately
with turkey.
