APPLE PUFFS

PREP TIME 40 MINS COOKING TIME 40 MINS YIELD 15-18 PIECES MINS APPROXIMATE COST RM12

INGREDIENTS
600g (green) Granny Smith apples
3 tbsp water
80g fine granulated sugar
1 tsp lemon juice
6 sheets (600g) pre-rolled frozen puff pastry 1 egg, beaten (for glazing)
1-2 tbsp fine granulated sugar (for sprinkling)

METHOD
1. Peel apples, cut into quarters lengthwise and remove cores. Slice 0.5cm thick. Place apples and water in a small saucepan and cook, partially covered, on medium heat until apples are tender (15-20 minutes).

2. Add sugar and lemon juice and continue cooking until soft, pulpy and most of the liquid has evaporated. Take off the heat, transfer into a shallow bowl and set aside to cool completely.

3. Cut pastry sheets into circles around 7cm in diameter. (Use a bowl as a guide and cut around it with the tip of a small knife.) Place generous spoonfuls of apple filling in the centre of each pastry circle and fold over to enclose, forming a semi-circle. Press the tines of a fork around the pastry edge to seal.

4. Arrange filled pastries on baking tray lined with greaseproof paper. Brush lightly with beaten egg and sprinkle a little sugar on each pastry. Bake in preheated oven (190°C) for 15-20 minutes or until pastries are crisp and golden brown. Serve warm.
