BANDUNG SODA WITH CINCAU
PREP TIME 5 MINS COOKING TIME 15 MINS SERVES 8–10
INGREDIENTS
300ml Evaporated Creamer
200ml boiled, cooled water
200ml Ice Cream Soda
150g strawberry ice cream
80g cincau, diced
Ice
For rose syrup
250ml water
200g sugar
A few drops red colouring, rose essence
METHOD
1. To prepare rose syrup, bring
water and sugar to the boil.
When sugar dissolves and
mixture boils, lower heat and
simmer for 5 minutes.
2. Add red colouring and rose
essence. Allow to cool.
3. Blend rose syrup (reserve 4
tablespoons for decoration)
with Evaporated
Creamer, water, Ice Cream Soda,
ice cream and ice.
4. Divide cincau into 4 tall
glasses. Pour blended mixture
into glasses.
5. Drizzle the remaining rose
syrup on top. Serve at once.
